Sure... app-specific notifications are configured within each app. If you don't want to be notified of incoming gmail, open the gmail app and goto Menu > More > Settings > Email notifications. There should be a similar set of steps you can use for any app that produces notifications. If you want the status bar notification without the audible, just set the ringtone for that notification to Silent within the app.
