Gmail spam

I don't think that feature exists within the GMail app. You have to do it from the web client unless you want to check off every one individually.
 
Does anybody know how to delete all spam at one time?

Are you referring to messages that either Gmail automatically marked as spam or you manually marked as spam? If so, it will be deleted in 30 days automatically. Are you talking about deleting it before 30 days, or are you talking about something else?

I don't see any way to delete messages in bulk without individually selecting them first, even using the web interface on the phone. You can do it via the web interface on the desktop though.
 
If you need to delete a large number of messages or need the full desktop functionality, you can use the full desktop version of Gmail on the phone; you don't have to use the mobile website version.
