We've already had a chance to try out Google Keyboard version 5.1 as it was included in the Android N developer previews but nowt he update is rolling out to everyone.
The update comes with various bug fixes and performance improvements, but the big changes are the improved theme selector and inclusion of Unicode 9.0 (the new emojis only work on Android Nougat though).
