A google update disabled my ability to speak my texting rather than type them and turned on some sort of text to speech for everything on my phone. I went to the menu to disable text to speech and it shows disabled but I am still getting this annoying voice speaking every key I touch. The button that used to allow voice texting now is a settings button but the voice typing key option is grayed and will not function.

Take a look under Settings > Accessibility and see if Talkback is enabled - it's an accessibility suite that enables (among other things) "Keyboard Echo" which speaks the letters as you type.
Could you take a screenshot (generally by holding the Volume-Down and Power buttons for a few seconds) of your keyboard / input screen? I'd like to know what buttons/options are available to you.
