what happens if you hard reset an htc one

By hard reset, I think you mean a full factory reset... this would put the phone back to factory settings. This would erase all user data from the phone and put it back to like new out of the box

Resetting HTC One (Hard reset)
If HTC One has a persistent problem that cannot be solved, you can perform a factory reset (also called a hard reset or master reset). A factory reset reverts the phone back to its initial state
