You might like to have a look in here LG Optimus M - Android Forums - this is where other members who own the same device hang out.
It is possible to remove stock apps, but this involves voiding your warrantee by rooting it - this is not for everyone, but details can be found in the All Things Root sub-forum (which is in the link above).
