I totally forgot how to do it, running Launcher Pro also.

Go to menu, select preferences, appearance settings, first option should be dock background, select it and select custom image and choose your desired image. All done.

Thanks, just have not changed it way before xmas and of course need to now that holidays are over!!

You can also longpress on the dock icons to change them as well as choose the swipe gestures for each.
