I want to set it up to look like the iOS style text message system (where texts show in the rounded bubbles that have a bit of a shine to them), so I chose that in the settings. When I sent a text, and it took me to the new "conversation" started, the text did show up like that. But when I went back into it later, all the messages were in the standard Handcent "bubbles" (more squared and no "shine" to them). What happened? Isn't there a way to permanently set the style?

You mean you chose a skin? Or you chose a new bubble style? If you did the latter, did you save the selection before you exited the style choosing menu?
