You should be able to use Titanium Backup (which requires superuser to work!) to uninstall superuser itself.

If for some reason you can't, you could just go into the superuser app and then in its settings clear any apps it has given access too. You may even be able to disable the superuser app (SuperSU, which I use, has this option), or you could use the system's Applications menu to disable the app. This may be better because it is reversible.

However, this app only does anything, and should only be present, on a rooted device, so are you actually asking how to unroot? If so, please post again, either here or in the main forum, telling us more about your device, and we'll be able to give better advice on this - it will be different for different devices.
