Home screen or Home screens, plural?

I want to customize my s3 home screen with my favorite "go to" apps and widgets. The problem is that it appears that there are actually 7 home screens, all of which share the main apps at the bottom. How can I set one to be the home screen the back button always takes you to? I know you can hit the home button, and it will take you to the center of the 7, but I understand you should always hit the back button to back out of an app, rather than just hit the home button. As it is now, repeatedly hitting the back button takes you to the last of the home screens you happened to be on. I hope I haven't confused you too much.
 
I always press home. Backing out is a chore. It only really helps with particularly bad apps that perhaps shouldn't be used. Home is fine to use.

Back will take you where you came from. So you can't change that
 
If you pinch outwards (if that makes sense) from one home screen, it'll zoom out to view all 7 home screens simultaneously.

If you then touch and hold one of the home screens, you can delete it. I have three home screens now, so I'm never more than one push away to get back to my centre screen!
