How do I start customizing? (noob Q.)

Just got the HTC Desire (2.1) yesterday, and just realized I can change the dock at the bottom. I saw a grey one I would like to install. Thought about installing ADW Launcher, but my carrier (Telus) will be putting out Froyo in mid October. So.... once Android 2.2 is installed, how can I change the dock style? And anyone know where I can find it in grey (like the iPhone, I think)?

BACKUP STRATEGY: (Bonus Q.!) I spent a lot of time customizing my phone already. (I have no internet on the phone, so all apps were installed manually via PC). Something tells me just backing up the files on the SD Card and internal memory via PC is not going to work. Because I may end up overwriting newer system files with the older ones. What's the best backup strategy before a major update?

I just use LauncherPro it has specific settings to change the dock and icons. Its very simple to customize everything. If you'd like me to email you the program since its free and you dont have internet access on your phone let me know. I'll send you the program and some sample docs, icons, etc. I have Froyo on my Droid X and still use LauncherPro I still think its the best.
