I've been looking through the Home Screen settings and I've gone into "theme/wallpaper/HS settings" screen mode (pressing an empty space on a home screen). All I see is the ability to align the icons or delete the home screen...or to change the wallpaper, theme, widget...or icons. I even tapped where you would be entering text..no reaction.

I don't believe home screens can be titled using the stock launcher.
You know you can always install a different launcher from the play store that may suit your needs

I don't think I've ever met a launcher that let me title a home screen. I don't think most people would want a title taking up space on the screen anyway. But if you do, then this is your answer: there are widgets that can just display text, which you can place where you like, whatever size/colour/font you like. Use one of those and it's done - and will work with whatever launcher you prefer to use.
