How to activate an inactive, rooted phone?

Tonight, I bought from Best Buy, a LG Optimus Exceed 2 in hopes to replace my current phone. It's a no contract, prepaid phone through Verizon. My thought was to just purchase it and put in my SIM card. Verizon prepaid don't have SIMs apparently. I was told by a Straight Talk representative to root the phone, before activating it. I have it rooted but it doesn't have a phone number, what are my next steps to get it working? I also need to keep my old phone number. I have to have it for work. Does anyone have any advice?
I would like to keep Family Mobile as my provider, because I'm already set up with them. But, if I can keep my number, I don't really care which provider it has to be set up with.
 
Update: I factory rest the phone and activated it with a phone number, just not service, and rerooted it. I can change the number at a later date, I've been told. I think I solved my own dilema, but any other advice would be welcomed!
