I want to be able to change default google account on my Motorola Photon without having to do a factory reset. Is this possible and if so, how? Thanks!

Go to Settings > Accounts. Change the Google account info. That will change it for your entire phone.

For email only, in your email app go to Settings > Add account > setup the account and check the box to make it a default account.

Go to Settings > Accounts. Change the Google account info. That will change it for your entire phone.
This will add a new account, but not delete the original one. If the OP wants to delete the original one, the phone must be rooted, and then goto /data/system/ and delete the accounts.db file. When you reboot, the phone will have no google account or associated data. I just did this a few days ago, cleaning out a phone before giving it to my SIL.
