Root How to change menu background in the menu in cyanogenmod?

You mean a theme set application ? I don't want a new application what is always running for a theme..
I saw in cyanogenmod a theme choosing part but i dont know where i can download themes for cyanogenmod ...
 
The Themes from the theming option you mention can be downloaded via Play, or you can use this app: Theme Chooser Themes. That indexes the most popular themes, gives you a sample and allows you to access their Play page directly and download from there. Once downloaded and installed, you can set them from the Themes option in Cyanogen settings.

Alternatively, you'd need to look for zip files to flash via recovery.
 
I can't find a normal theme what change the menu background too! Only notification bar, maybe icons and background changing.. (not in menu).
And it's possibile to change the default locksrcreen without running apps? I already found locksrcreen changers but its an application... it's possibile ?
 
You probably can't change the background then.

You should be able to add widgets to the lock screen, other than that, you'll need an app like widget locker or Go locker to add further customizations.
