How to change the function of the button , left of HOME button?

In the S4 and S5, the bottom left button, next to the home button , used to hvae the function of bringing up options/ setings.

Now in the S6, it brings up all applications currently on, so we can close them one by one or all.

How do I change this?

I rather have it have the function of options, settings like s4 or s5.

You can't but really you'll get used to it!

I have to agree with Enahmir. I hated the lower right button not being able to access "settings" for most apps but I've gotten used to it. Most apps show either the sandwich symbol or the word "More" to access settings. You'll get used to it.
