how to log out of your email account

Welcome to Android Forums.

If I understand your question correctly you are concerned about others accessing your email on your phone. I use AppLock to secure apps on my unlocked devices.
 
Hi there :)

To logout of your email you:
Go to settings - scroll down to accounts - tap on the type of email account (e.g. Email or Microsoft Exchange ActiveSync) then press the account you wish to remove - finally tap remove account at the bottom and confirm
