Do you simply want to remove the icons from the home screen? Press on the icon and once the garbage can appears, drag it there and you'll remove the icon.

If you meant to remove android stock apps that come preinstall on your phone, you'll need to root your phone to do that.

Just get Launcher Pro from the market.
