Root how to root & install custom ROM w/o losing installed apps

I have a rooted Sero 7 Pro using xboxexpert's custom ROM and Tablet UI. Works great.
Our 9 yr old granddaughter has been up for the summer and we got her one (actually got her's 1st, liked it so well I bought one for me). Her's is still stock. As she has a bunch of games and a couple apps on it, is there a way to root and install the ROM & TabletUI w/o losing and having to reinstall all her stuff? She'll be heading back to PA in a week and would like to send her home with it rooted & rom'd.

Which custom ROM. He lists a few on the XDA site?
