I have the HTC Vivid AT&T, no sim. I want to update the software to 4.0 or above, currently at 2.3.4. Is it possible to update without sim?

You should be able to find the information you need in the Vivid - All Things Root forum. Yes, you should be able to install a custom rom without a SIM. I have done this on many devices, you just will not have data nor phone connections and will need wifi access.
