I accidentally factory reset my phone a week ago...

and heard that rooting my device and then using a third-party app to recover the lost data is possible. Is this true? If so, my second question is...how do I root? I've tried one-click services like KingRoot and KingoRoot, but neither succeeded. I don't want to risk bricking my phone, but if anyone is willing to help, I'd be happy to provide whatever information is necessary for you to guide me through the process. Thanks in advance!

I've gone a week doing very little with my phone, as a common thing I heard was that factory resets don't truly delete the data until you eventually overwrite it with new content. If what you're saying is true, however, then I'm actually sort of relieved; I can finally start anew instead of clinging to the hope that my old files are recoverable.
 
The internal storage in the s7 is encrypted by default... Factory resetting the device throws Away the encryption keys... So even if you could recover anything it would be an encrypted blob... Which you can't decrypt.
 
Well, it's good to have clarity on this stuff. I've been to at least a dozen sites, which promoted software such as Dr.Fone, PhoneRescue, etc. as means to recover lost data. Guess my skeptical nature proved beneficial...
