when you swap your simcard, your number wilI change to the new sim.

If you want to keep your existing sim, and change the number on that, talk to your network provider and they can do it for you....

In case you meant change the IMSI, the answer is "no". Anyway the SIM is the property of the carrier, and they would be very unhappy with you modifying it.

As Andy says, the carrier maps the SIM identifier to the phone number, so if you want to change your phone number, or associate your current number to a different SIM, you need to speak to them.
