Yes they can, email and all photos linked to your Gmail account such as Google photos....

As an example, if you log into your Gmail account in a web browser just click on the 'Details' link in the bottom right and use the 'Sign out of all other Google accounts' button.

If you have downloaded them into folders that are synced with Google Photos, yes.

Not if they are only on your device, unless they use that account access to install spyware (I'm assuming that the issue here is privacy with someone you generally trust rather than a suspicion that someone has unauthorized access to your account).
