IMAP email account - initial download

Right. I've been using a pop3 setup on my phone (and on my PC come to that) as that's been quite adequate for my needs. I've now been looking at getting an imap setup running and having a couple of issues.

The account setup isn't the problem, that all works fine. It's just that the way I use my email, which isn't that different to most I presume, is that the Inbox stuff gets looked at and then deleted or dealt with. The 'dealt with' pile could be filed in a separate sub-folder for future reference. I have many sub-folders that I'd like to be able to search/refer to whilst offline and therein lies the problem - how to get all of these sub-folders (old emails basically) to download initially without having to go into each sub-folder insividually.

I use Maildroid and each sub-folder can be set to 'offline' (so a copy is kept locally) but there doesn't seem to be a 'global' setting for this and you then need to enter each folder individually anyway and 'download' old emails.

Has anyone got any ideas if Maildroid can be set to download everything automatically (initially)? Or any other email client? On top of this if I 'saved' a new email into one of these 'offline' folders it would also need to be synced to the server.

All input appreciated - even if the comment is 'what a plonker, that's easy and so obvious - you just do 'this' .... as I've probably missed something very simple!

NB: I will post this on the Maildroid SlideME page but I've got to wait 24 hours after registration beforehand!
NB2: please, no comments about having no need to keep things locally as imap syncs everything! I'm using imap to sync things when 'I' want to sync, rather than have to reply on an 'always on' connection. I live in Cornwall and the 3G connection is 'spotty' to say the least and I'd need to drive for 3 or 4 hours to get a 4G connection (and I'd have to change service providers!).
