Invasive applications?

Hi all, brand new to the forum and need some expert opinions. A number of the apps that are on my new Samsung Fascinate say that they want access to my contacts, my GPS location (even though they don't need it to function), etc. Angry Birds (v151) even wants to send SMS messages. What exactly do these apps do with all this information and access? I'm pretty private and don't want to give away all this personal info.

Plenty of apps have ads built in. They want full interness access to download their annoying banners, and access to your location to figure out what type of ads to serve.
