My wife has an iPhone and I have a Galaxy S4. Is there any fix to how my images are always compressed through picture message? She can't read text because the picture is blurred. Also, when I receive picture messages I have to click "download" and it doesn't always work. Sometimes I have to click download a few times before it works

Use a chat app. You can't change image compression via MMS because that's tied to the network. There are settings in the messaging app, but that won't work unless network supports it too. It would be better to use a chat app.
