Is it possible to sort photos from your photo picker, or is there an app you can install?

Which photo manager app are you using? The stock Gallery app? The Google Photos app? They all should have some basic sort and display option so you can adjust how your photos are shown -- i.e. oldest or newest first, large or small thumbnails, etc. The thing is each app will have a different user interface so you might need to peruse through the app's Settings/Config/Options menu or there might be an icon in a upper or lower menu bar.
