Jelly Bean (Android 4.1.1): How to choose default ("Always") app

Guys, I ran CleanROM 5.6, which is a Jelly Bean version of Android. I have a hard time with the default app choices. The system would not let me choose particular app "always" option as a default app. For example, when I click on a URL link in my e-mail message, I would be prompted with the choices of browser to handle to referred link. I try to select "Always" button for chrome, but keep getting following "Clear default app settings by going to Settings> Applications manager > All" I've encountered this issue with many other applications. The only thing I can do is to make a "just once" choice, which is kind of annoying because I have to do it all the time for the same apps.
What can I do to fix the issue and be able to choose "always" for the apps I want to use as default for one or another task?

The "Clear default app settings by going...." message shows just to let you know how to clear the default if you ever want to use a different app later. If you select Always then choose the app you shouldn't have to do this selection anymore till you clear the default.

That is the thing, how can I know which one of the application is the "default" that I need to clear? For instance when I try to run video from the website it gives me choice of three or even four different apps I can view video in. Does that mean I need to go to each of these four apps and "clear defaults"?

After you make your selection, the app you selected will be the one the phone defaults to. If you later want to choose a different app you can just go to Settings>Application Manager then select the app you want to clear the default on. Scroll to the bottom and select clear default. Then you can make a different selection later. Make sense?
