In doing searches for Note Apps on android, I found it a bit confusing. So here's a small thread of my search results, as of Feb 2011. Hope it helps someone.
I was looking for a note-taking app with local copies and syncing. I was aghast to learn that the app I was using couldn't let me access my data while I didn't have reception. I keep door codes on my phone, and when I was in a basement, whoops - there goes the usefulness of the entire concept!
I use Microsoft OneNote to organize LARGE amounts of data, that need a tiered structure. It works great for embedding links to local files, screen clippings, etc. Still kludgey MS, but it works.
I use a Simplenote/ResophNotes/JadeNote system for my mobile-specific notes: To Do list, codes, shopping list.
This system really works for me. I can't tell you how much time I've wasted with ActiveSync, trying to sync OneNote serverless, etc. This system allows me the organizing power of OneNote, with a very simple syncing system.
It's funny how there is so much focus on streaming crap, games, and other stupid stuff, but finding a system to sync simple text took some digging...
Criteria:
FREE
Local copies on BOTH computer and device
Sync over data connection

This appears to work on all criteria, took me 5 mins to set it all up and has worked great for a week.
