If you change it so you have no secure unlock feature then it will display the contact/number on the lock screen but if you have a security feature such as the fingerprint scanner or pattern lock then it won't display the number/contact pm the lock screen, poor I know. I email Samsung about this and they said:-
"In answer to your query kindly note this function is not currently possible with the Galaxy S5 operating system version.
