Looking for an app that can do this...

I think of things I need to do when driving. I want voice to text input that will record these types of things and either email them to myself, or maybe text them, or even store them in a todo list or notebook.

Any suggestions

Evernote? It won't currently do the speech to text though. There is a beta available in their forums

Hmmm - wait a minute.

You want your speech transcribed to text....

Google Voice does Transcriptions. And it can send you SMS notification. And forward those to your GMail (and / or other email account.

And it is working really well for those of use using it as our VM alternative.

Bingo! - I think that will work best for you - call yourself (or your GV number), leave a VM, and dictate.

Now, the only thing that I don't know is the max length for msgs....

Ahh, here it is - Voicemail : Length of voicemail messages and greetings - Google Voice Help - 3 minutes long.

That could be a deal breaker.
