i just got my s7e edge about 2 weeks ago, not completely done setting up on my device but i lost my phone 2 days ago and its been off since... what can i do to track my phone while its off?

While it's off or battery dead, there is nothing you can do to track it.
Hopefully you have something set up to remotely wipe the phone if found by someone else like Android Device Manager.
If you have your Samsung Account set up with Factory Reset Protection and Reactivation Lock enabled, that should prevent the phone from being wiped and used by anyone who finds it.
