Galaxy 2 lost my sim card contacts by mistake. How or can I recover them ?

Are you sure the phone just isn't displaying them? Check the contacts app settings and make sure that it is set to display SIM contacts, and also check that "all" contact groups are being displayed.
If they really are gone, there is no way I know of recovering deleted data from a SIM card (it's not at all like a microSD card).
