The best way to ensure nothing like this happens is never to allow them unsupervised access to your phone, do not tell them your gmail password and enable two-factor authentication on your gmail account.
If someone has installed spyware it will be designed to be difficult to detect. I'm not an expert, and imagine that what you look for depends on which spyware is installed. There are ways of making absolutely sure there's nothing there (factory reset and reflash the phone's firmware clears absolutely anything), but they are the sort of thing you do when you're sure there's an infection and you have run out of other options, not something I'd consider on a vague suspicion.
And I'm obviously no more going to tell you how to bug his phone than I'd tell him how to bug yours
