What's the significance of the new trend where MVNO's like Red Pocket and Mint are piggybacking multiple networks instead of using just one? Will it obscure accountability of invasion of privacy and the newly arised controversy of network operators reselling our location to whoever's willing to pay for it Even if app's don't, your cellular provider knows where you are if you're connected to their network

It doesn't change the situation one iota...
 
Right now Google Fi is the only MVNO that can switch between different networks. With all the other ones you stay on the same main network (unless you're roaming).

Why do they offer several? Probably for more coverage, more phone compatibility, and to get more customers.
 
Your carrier is going to be constantly monitoring your account no matter which cellular network(s) it is contracted to use. That's their fundamental purpose, to keep track of your usage and then charge you a fee for the service they provide. In a more fair world, those carriers would only keep track of the numbers relative only to the amounts of bits being sent/received, as that's what it used to determine those fees, but in reality they retain documentation about much, much more.
