"AppsOrganizer" and "FolderOrganizer". I use AppsOrganizer. It allows you to create folders for all your apps and you can place the folders on you home screens. You can name each folder and give it an icon. FolderOrganizer is by the same developer I'm told but has an option to add new apps to folders after you install them. (AppsOrganizer doesn't have this.)
"Auto app organizer" and "Smart Shortcuts" are also good. All 4 are good, they each have little things you might like or dislike. I'm using Smart Shortcuts because it's a smaller app, a little simpler, and I like some of the icons better.
Another vote for Apps Organizer. It also integrates with Titanium Backup - you can select from your Apps Organizer groups to do batch backups, etc. on.
