Need "selective" email sync

When I have email set to sync, any email I delete from my phone is deleted from the email server. When it is set to not sync, I don't get emails and all of the deletions from my phone pass to the email server as soon as I set email to sync so I can get my new emails.

I get hundreds of emails every day, but I need only a fraction of them on my cell phone. I'd like to be able to delete them from email on my cell phone but have them available when I go to my laptop. Is that not possible?

It might help if you state which email service you use and which email app you're using on your S5. Just assuming you're using the default email app that came with your phone, the most practical recommendation is to switch to a a third-party email app, there are plenty of options in Google Play to choose from. The default email app is good for just the basics, but once your needs grow past that, a third-party option will almost always provide you with more options, functions, and the ability to customize the interface to suit your needs.
I prefer the 'K-9 Mail' app and in its Settings menu there are options to enable/disable 'Sync server deletions', plus if you delete a message in K-9 it will either 'Do not delete on server' or 'Delete from server' or 'Mark as read on server'. There's also selections to delete messages 'Immediately' or 'When polling' or 'Manually'. Those are just options relative to your query, there are plenty of options for other things too.
