I know there are a bunch of apps that let you look at your notification history. I haven't tried any of them myself in years, but you could try these:

Unfortunately, I don't think they'll show notifications you received prior to installing the apps. I'm pretty sure these apps have listeners that collect/store your notifications locally, so it will only start showing your notification history from the install date forward.
