Help OK Google - where are dictated notes stored?

I can create a note on my Galaxy S8 by saying "OK Google," then dictating the note. But the only way I can retrieve it is by saying "OK Google...Show my Notes." Where are the dictated notes stored, and can I bring them up to be able to edit them? (I have unsuccessfully searched throughout the web and this forum.)
 
Bobby is correct, they are not stored on your device. The way you edit them is to open Google assistant and type or say "show my notes". From there, if you tap on the note you can edit it.

Am I the only one who finds that creepy and scary?

Creepy, because who knows who has access/can listen to them.

Scary, because I've always had, and believed to be sensible, both on- and off-site storage. I want MY data on MY hardware, then also somewhere else.
