One v multitasking confused...

Coming from an iPod touch (closest thing to a smartphone I've ever had) I just got my one v and have a few questions. I'm a bit confused on multitasking, I tap the right most button and I get several vertical files, are these the background apps that are currently running? I've noticed that when I hold and "remove from list" sometimes that particular app still runs. I also am wondering if I ever have to close and app by using the built it task manager, is this even necessary? Finally is there a way to "disable" or turn off apps that came bundled with virgin? Such as gair or the like?
 
The only way to really remove or disable those apps is to root your phone, and use something like Titanium Backup to freeze them.


As far as the multitasking go, android is REALLY good at multitasking, there should be no need to close them. However when you push the square button, you can go ahead and swipe the app on the screen to remove it. Usually (for me at least) that seems to close the app.
