Perhaps a way to get Air Gestures?

I've just come to realize that the Samsung Galaxy Avant seems to have a motion sensor, according to their website in regards to the few gestures that are available.

With that in mind, do you think perhaps that a custom rom (or tweak) could bring extra gestures to this phone?

The gestures use the proximity sensor, which is present in most phones. You should be able to find apps to add various functions using this sensor.
For instance, the S5 has air wake-up built in which allows you to turn on the screen by waving your hand over the sensor. On previous phones (including the Avant), I've accomplished the same thing using Auto Screen On.
