what sim do you need and do you need an sd card in it all the time

You need a SIM from your chosen network and which fits the phone (different phones take different sized SIMs).
The phone will work without an SD card. However, if you remove the card anything that's on there is of course unavailable, and if e.g. the camera is set to store pictures on the card it will not be able to work without one.
