I have a Samsung Galaxy s3 and Since the recent firmware update, I have lost some available fields in my phone book (website, notes, etc.). Why?
 
Depends. Those fields are only available when saving to phone memory and not SIM card. Are you saving to SIM? Also, have you tried scrolling down and clicking 'add more fields'? I have a Note 2 with 4.4.2, and I still have all fields. I'd think you should have because our devices are same generation.
