Phone stolen. How do I know ERASE DEVICE worked?

My phone was stolen. I went to https://www.google.com/android/find

I chose ERASE DEVISE, which says it erases all data on the devise.

However, my bank app was accessed recently, maybe they scrubbed all the data before I could erase?

I don't see the phone listed on Find my Devise...

Is there a way to tell if it really has been erased?
 
Did you have a lock screen set up?
If you did, that should be a good deterrent to keep most people from even being able to access your files or use any apps. A more tech savvy thief 'might' be able to defeat the lock screen but it's still something that takes time to actually do. But for most people, the lock screen prevents them from getting to your files, making phone calls, using apps, etc.
If you didn't, than that's more of a problem, as anyone can just pick up the phone and use it. How much time occurred in between the time your phone was stolen and when you eventually used Erase device? If it was a significant amount of time you really do need to sit down and reset all the passwords for your various online accounts.
Also, report the phone as stolen to your carrier and have them freeze your cellular account on that phone. This also puts the phone on a national blacklist that all the carriers follow so the thief can only use their own WiFi for online connectivity. (But again, hopefully you had a lock screen enabled so they can even access anything.) If you leave Location enabled on your phone, you can use that Find My Device service to get a pretty good approximation of just where that phone might be.
