Playback In Car Stereo?

I have a Droid Razr M, and I'm looking to see if there are any cables out there that can replicate the functionality of an iPhone cable when plugged into a car stereo.

By this I mean: are there any cables that allow you to hit the "next song" button on the stereo itself? Using a standard audio jack means that I have to look down at my phone every time I want to skip a song, which is inconvenient and unsafe.

Depends on the car more than the cable. I drive a 2012 VW Jetta TDI, and whether over bluetooth or the built-in USB port in hte car, I can use both to navigate any connected device. Are you plugging into a USB port in the car?

Well, the stereo itself has to work the same way with an iPod. Borrow a friends iPod, and plug it into your USB port. If it works, you can use just any USB to micro USB cable to hook your phone up. If it doesn't work with the iPod (or you don't even have a USB port) then it most certainly will not work with your phone. Have you tried that GripGo thingy? It mounts to your windshield and it holds your phone in place so you don't have to take your eyes off the road. It's especially helpful when you're using your phone as a GPS, if you do so.

If you want to buy an aftermarket stereo with USB, MAKE SURE it says the USB input works for iPods (it'll also work for Android). I bought an aftermarket stereo with a USB port, and it turned out the USB port can only take thumb drives.
