Help Preventing Jelly Bean update.

One of the things that the update looks for is root access and the presence of certain APK files. If you want to block it, you can always root your phone and rename some of the APK files for optional applications. Be careful, however, as this can sometimes have unexpected consequences if you rename the wrong APK file...
 
The challenge is that there is no "don't update" function within Android. To block updates you need to give the update a reason to not run. And the easiest way I know of doing that is to rename unnecessary APK files. But to get to those APK files you need root. As such there may not be an easy solution for you... sorry!
