preventing ota updates

I just rolled back some bloatware to earlier versions in order to save space. How do I prevent OTA from undoing that without being rooted?
 
Depending on the whatever it is phone or tablet you've got there, and possibly if it's a carrier version, there's a chance you might not be able to prevent it from updating, not without root. From experience I know the Samsung Galaxy Note7 had forced mandatory OTA updates, that couldn't be prevented.
 
You can set your phone to only update apps manually. Here is how to change the Play Store settings for how apps are updated:

1. Open the Play Store.
2. In the top left corner tap the menu icon.
3. Tap Settings.
4. Tap Auto Update Apps.
5. Tap the option you want. The WiFi option will only use WiFi. "Update apps anytime" can use your mobile data. "Do not auto update apps" will not update any apps.

But as @mikedt mentioned some carriers might force updates.
