Re-Usage of S6

Hello, I have ordered the new Galaxy S8 and I currently have the s6. I do not want to trade in or sell my phone. What I'm wondering is, once I get my service switched over to my new S8, can I still use my S6 to access the internet and through wifi and still use it as a multimedia home network device, such as casting shows and movies from my phone through my wifi?

I have also wanted to try rooting my device and unlocking the bootloader. can I also do this with my S6 with no network service?

Anything that may stop you doing that, isn't going to be related to not having network coverage....
