Hello and welcome to Android Forums Stan L.

You can either...

1. Root your phone and replace the boot animation, or

2. Flash the stock, (carrier unbranded), firmware for the U.K. which does not have the O2 boot animation. See #1.11 of 42 Galaxy S5 models - Dummies Guide. The stock firmware, unbranded, is, "BTU", for the United Kingdom.
