Removing self from a family plan

You'd have to get in touch with your carrier, I'm sure the process would be different for each of them. I know with Verizon (post paid) you have to do an Assumption of Liability and open an account in your name.

No matter what you will need a new account for billing. Who is your carrier?

MetroPCS is no contract so you can cancel one line at anytime.

If you only have two lines removing one will mean you'll lose the multi-line discount.
